I love eggplant, if it is cooked right, and I think that this dish is going to be one of my favorites of all time.
It is 11:46 am and I have about 15 more minutes of work to do for the day. I think after doing my work I am going to make my eggplant parm dinner for tonight so I don’t have to do it later. We may play some music this evening near the church and if I get my dinner done now then I can just come home and eat. I need to fry the eggplant first and then I will back it with some crushed tomatoes and cheese on top. I will make a new recipe that the heating and cooling rep gave me last week and see how it works. I think it is going to be really good because she is a master chef and really knows how to make dishes like this one. She told me about it one day while we were working on a commercial cooling device for this local business. I love eggplant, if it is cooked right, and I think that this dish is going to be one of my favorites of all time. I just want to get it done this afternoon so I don’t have to cook and clean the HVAC system later, like I told myself I would do when I was at the local business buying a HEPA filter. It is so nice when dinner is done and you come home hungry and ready to eat, just like my mom does back home in the States. I still remember mom’s fireplace going while she cooked dinner near the air purifier.
